Delicious Nigerian Egusi Soup

Egusi soup is one of the most popular soups in Nigeria and can be prepared and enjoyed by all tribes. Egusi is made of fat and protein- rich seed of certain cucurbitaceous plants (squash, melon, gourd), which are usually dried and grinded used as a major ingredient in this West African cuisine. Egusi soup can be enjoyed with different sides like pounded yam, eba (garri), fufu, semo, amala, and rice.
Egusi Soup is acceptable among the tribes and used in various occasions , the taste of Egusi soup cut across ethnic groups in Nigeria as it is prepared in different methods. The key ingredient is mainly EGUSI. t
Egusi Soup is prepared with melon seed and eaten by most tribe in Nigeria. In Yoruba it is known as" Efo Elegusi" Igbo it is known as "Ofe Egusi , Hausa it is known as "Miyan Gushi. In Ijebu apart of Yoruba there is an especially Egusi called Egusi Ijebu. There are many ways to make Egusi soup ,first thing is getting the right ingredients and starting with the most important thing Egusi Seed.
LIST OF INGREDIENTS OF EGUSI SOUP
- Egusi (Melon) seed: These are grounded melon seeds that gives the soup its unique flavour and thickness .
- Meat/fish/seafood: Common options incudes beef, goat meat , ponmo(cow skin) stock fish, smoked fish , shrimp 🍤 and snails and any preferred protein .
- Palm oil
- Vegetables:There are different leaf that can be used to contribute to the nutrient to the soup such as bitter leaf(ewuro) , Ugu leaves (pumpkin leaves ), spinach .
- Meat stock
- Spices and Seasonings : These incudes salt, seasoning cube, pepper ,garlic, ginger, onions ,crayfish .They enhance the aroma of the soup.
- Optional ingredients : locust beans
PREPARATION STEP
- STEP 1: Get the Egusi seed blended with crayfish and set aside.
- STEP 2: Get the bonnet , bell pepper, onions and little tomatoes 🍅 and blend all together
- STEP 3: Boil all the protein using onions ,garlic, ginger, salt, seasoning cube, black pepper and keep the stock.
- STEP 4: Get any leave of your choice from the ones list and slice it and rinse it with cold water.
Once these are set aside the following get a ready to start cooking 🧑🍳
COOKING STEP
- Get a clean pot pour the palm oil and sliced onions, if you like you can add the locust bean. let the oil heat up this will take about 2 min .
- Pour the blended pepper mixture into the pot and let it’s cook for about 5min - 10 min depending on the quantity of pepper mixture, add salt, seasoning cube and crayfish when frying the pepper mix. Then add all the proteins to the stew to add flavour .
- In a plate pour the blended Egusi (melon) seed and take a little bit sauce from the pot and mix throughly ,in small portion put the Egusi in the stew frying and let it go for about 10- 15min and add stock , stir it briefly and let it cook for another 10min. The Egusi must have been cooked at this point.
- Last add the vegetable , stir gently and cover the pot for about 2min and the soup is ready
At this point you have the Royal Feast Egusi soup with any side of your choice.
